Top Ramen Salad

Ingredients:
1 package Coleslaw
2-3 packages of Oriental Ramen Noodles
1/2 cup Slivered Almonds
3/4 stick butter

Brown Noodles and Almonds in Butter

Sauce:

3/4 cup Canola Oil
1/4 cup Brown Sugar
1/4 cup Apple Cider Vinegar
1 package of seasoning from the Oriental Ramen Noodles.

Mix all the ingredients and Enjoy!

"Chicken" Florentine Bowtie Pasta

Ingredients:
2 tablespoons extra virgin olive oil
1 cup finely chopped white onion
1 clove minced garlic
4 cups baby spinach leaves
1 package Morningstar Chicken-strips (heated but not browned)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 Cups Philadelphia Cooking Creme
1 pound bow-tie pasta or other small noodle
1 1/2 cups shredded mozzarella cheese

Directions
1. Preheat oven to 350 degrees F. and spray a 9×13 inch baking dish with non-stick cooking spray.
2. Place oil in Dutch oven or large pot over medium heat. Add onion and cook, stirring until tender, about 5 minutes. Add garlic and cook, stirring for 1 minute. Stir in spinach leaves, cook, stirring until wilted about 2 minutes. Add chicken, salt, and pepper, and cook until heated through, about 3 minutes. Add cooking cream, stirring to combine.
3. Cook pasta according to package directions, drain and run under cold water to stop cooking. Add pasta to chicken mixture stirring to combine. Transfer to prepared baking dish and top with cheese. Bake for 20 to 30 minutes, until cheese is melted.Makes 8 servings

Sopapilla Cheesecake

Ingredients:
3 cans Pillsbury butter crescent rolls
2 (8oz) packages cream cheese (softened)
1 cup sugar
1 teaspoon vanilla
1/4 cup butter (melted)
Cinnamon & sugar

Directions:
Unroll and spread 1 & 1/2 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

Easy No Bake Cheesecake

Can I just say this is the best Cheesecake I have ever made! My husbands favorite thing on his birthday is Cheesecake. I will never use another recipe or ever buy another Cheesecake from the store :) Enjoy!





Ingredients:
1 Premade Graham Cracker Crust or make your own
1 envelope dream whip
1 8oz. pkg. cream cheese
1 16 oz. can Cherry Pie filling (or any flavor..the picture above is Raspberry)

To Make your own crust:
1 individual package of Graham Crackers, crushed
3 Tbsp. white sugar
3 oz. butter, melted

Directions:
In a medium sized bowl, combine crushed Graham crackers and melted butter and sugar. Mix well and mold to the contour of pie plate. Brown in a 350 degree oven for 5-8 minutes. Watch closely so it won't burn.

For filling:
Whip dream whip envelope according to the package instructions. In another bowl beat cream cheese until smooth. Then combine both mixtures. Pour into the prepared graham cracker crust. Let it set for a few minutes. Then Top with the pie filling and chill over night.

Cinnamon Tortilla Chips & Strawberry Salsa

Tortilla Chips:
5 large flour tortillas
Water
1/4 cup Sugar
2 tsp. Cinnamon

Strawberry Salsa:
2 Green Apples
2 Kiwi
1 medium Orange
1 10oz pkg. Sweetened Frozen Strawberries


Preheat oven to 475. Combine sugar & Cinnamon in a small bowl. Brush
Tortillas w/water. Sprinkle w/sugar & cinnamon mixture. Cut each tortilla into wedges. Spray baking sheet with cooking spray. Place wedges on baking sheet &
Bake 5 to 7 minutes, or until golden brown.
Peel & dice apples, kiwi & orange very small. Put in medium – size bowl. Place
Partially thawed, strawberries in blender or food processor for 20 seconds. Combine
With diced fruit & stir.


(You can make as many chips as needed and use more cinnamon or sugar to taste)

Smashed White Bean and Avocado Club

Adapted from: Meat-Free Recipes

Multi-grain bread
1 large avocado
alfalfa sprouts
1 cucumber
1 onion (Slice what you like)
1 can white beans, your choice, or prepared hummus
1 Tbs olive oil
salt & pepper

Smash white beans with back of a fork and add olive oil, salt and pepper (or if using hummus, use as spread). Spread on both sides of bread. Cut avocado, onion, and cucumber and layer on sandwich. Top with sprouts.

Company Carrots

2 1/2 lbs carrots (cooked)
1/4 cup liquid from cooked carrots
1/2 cup mayonnaise
1 Tbs horseradish
1 Tbs minced parsley
1/2 cup cracker crumbs
3 Tbs butter
Salt & pepper

(double recipe for cake pan size)

Mix liquid from cooked carrots, mayonnaise, horseradish, parsley. Add carrots. Spread into cake pan and sprinkle crackers on top. Place little slices of butter on top to soak into crackers.
Bake at 350 for about 20 min.
